Polenta Pizza

From the Fat Free Vegan Kitchen I made Polenta Pizza.  Need to make sure the polenta is super thick!  I don't think I thickened mine enough... had to extend the baking time for the crust.

I topped it with pesto, chopped spinach, cheese [not vegan or fat free], diced cherry tomatoes, and dried cherries.  Carol lovingly prepared the toppings! 

It was pretty fabulous!

My blog needs more pictures...  How can my blog be a success without the proper amount of food porn?!
