Vegan Zucchini Corn Bread.
- 2 cups finely shredded zucchini liquids reserved
- 1 cup finely shredded carrots liquids reserved
- 1 teaspoon salt
- 1 cup cornmeal
- ½ cup whole wheat pastry flour
- ¾ cup sugar
- 2 teaspoon baking powder
- ½ teaspoon cinnamon
- 1 teaspoon apple cider vinegar
- 1 tablespoon smart oil
Combine all ingredients. Place ingredients in a greased 9X9 glass pan. Bake for 40 minutes at 350 degrees.
